Tips for the Best Pozole Verde

Start with 2 teaspoons of Knorr chicken bouillon and add more only after tasting. Chicken broth can already contain quite a bit of sodium.
Chicken thighs are my preferred choice because they stay tender, but chicken breasts can be used if you prefer them.
For a milder pozole, remove the seeds and membranes from the jalapeños. For more heat, leave some of the seeds in or add an extra jalapeño.

Ingredients
- 2 pounds boneless skinless chicken thighs
- 2 pounds tomatillos husked and rinsed
- 2 poblano peppers halved and seeded
- 1 to 2 jalapeños stemmed and seeded for less heat
- 1 medium white onion quartered
- 5 garlic cloves
- 1 tablespoon olive oil
- 6 cups chicken broth
- 2 teaspoons Knorr chicken bouillon plus more to taste
- 2 cans hominy 25 ounces each, drained and rinsed
- 1 teaspoon Mexican oregano
- 1 bay leaf
- 1 cup fresh cilantro loosely packed
- 2 tablespoons fresh lime juice
- Salt to taste
Method
- Preheat the broiler. Place the tomatillos, poblano peppers, jalapeños, onion, and garlic on a baking sheet. Drizzle with 1 tablespoon olive oil and broil for 8 to 10 minutes, turning once, until softened and lightly charred.
- Transfer the roasted tomatillos, peppers, onion, and garlic to a blender. Add the cilantro and about 1 cup of the chicken broth. Blend until smooth.
- Heat the remaining olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Pour in the blended green sauce and cook for about 5 minutes, stirring occasionally, until the color deepens slightly and the sauce becomes fragrant.
- Add the remaining chicken broth, Knorr chicken bouillon, Mexican oregano, bay leaf, and chicken thighs. Bring to a gentle boil, then reduce the heat and simmer for about 20 minutes, or until the chicken is fully cooked and tender.
- Remove the chicken from the pot and shred it with two forks. Discard the bay leaf.
