Roasted Beet Salad with Grilled Chicken

Ingredients

  • 4 medium raw beets (with leaves and stems)
  • 2 cups of kale, roughly chopped
  • 2 cups of arugula
  • 1 cup of collard greens, chopped
  • 1/2 cup of parsley, finely chopped
  • 1 cup of lettuce, torn into bite-sized pieces
  • 2 grilled chicken breasts, chopped (Ask me for the recipe if you’re curious!)
  • 1/2 cup feta cheese, crumbled
  • Olive oil (for cooking and dressing)
  • Your favorite vinaigrette
  • Salt, to taste
  • Fischer & Wieser’s Pineapple, Coconut, Mango Tequila Sauce (optional, for a tropical twist)

Instructions

  • Prepare the Beets: Preheat your oven to 400°F (200°C).
  • Wash the beets thoroughly and wrap them in foil.
  • Roast in the oven for about 1 hour, or until tender when pierced with a fork.  Allow them to cool, then peel and chop into bite-sized pieces. Save the leaves and stems.
  • Sauté the Beet Greens: Wash the beet leaves and stems. In a pan, heat a little olive oil over medium heat and sauté the leaves and stems until tender. Set aside to cool.
  • Assemble the Salad: In a large bowl, combine the kale, arugula, collard greens, parsley, and lettuce.
  • Add the cooled, chopped beets and sautéed greens.
  • Add Protein: Toss in the chopped grilled chicken breasts. (Feel free to reach out if you’d like the recipe for the chicken!)
  • Dress It Up: Drizzle olive oil and your favorite vinaigrette over the salad. For a unique flavor twist, add a splash of Fischer & Wieser’s Pineapple, Coconut, Mango Tequila Sauce. Season with a pinch of salt.
  • Finish with Feta: Sprinkle crumbled feta cheese over the top.
